Hawaiian BBQ Chicken for Slow Cooker Challenge Week


Slow Cooker Challenge Week 2012

I was very nervous to join in the Slow Cooker Challenge week.  I have never really used a slow cooker/crockpot much. I have made chicken with garlic/onions and chili but not for 5 days in row!  I decided to take the plunge and make something that a friend had made via Pinterest-Hawaiian BBQ Chicken.

I went to the store this morning and gathered my items for the weeks challenge as best I could.  The one thing I could not find was the Hawaiian BBQ sauce.  There was one brand of it, but the second ingredient was High Fructose corn syrup, and I just couldn’t buy it. The one recommended in the recipe was the one from Target & Archer Farms, but I wasn’t going to Target.     I decided to try another route and went  with the  Soy Vay Island Teriyaki. Sure, it wasn’t the Hawaiian BBQ sauce, but it had the pineapple effect.   I am being brave here. 

The original recipe was from Six Sisters Stuff and is called Crock Pot Hawaiian BBQ Chicken 

My adapted recipe for Hawaiian Crockpot Chicken

  • 3-4 chicken breasts
  • 20 ounces of Pineapple chunks, drained
  • Soy Vay Island Teriyaki Sauce.
  • cooking spray-I used olive oil spray
  • your favorite crockpot
  • brown rice from Trader Joe’s (frozen)



  • spray crockpot with olive oil spray
  • pour some of the Island Teriyaki  to cover the bottom of the crockpot
  • place chicken breasts on top of sauce
  • cover with more Island Teriyaki
  • dump pineapple chunks on chicken etc

cook on high 2-3 hours or low for 4 -5 hours.

My crockpot cooks fast so I cooked mine on high for an hour then turned to warm for 2 hours and the pineapple was a golden brown on some of them.  Then I added some brown rice from Trader Joes that is frozen. Totally love it! Quick and easy to fix. 4 minutes in the microwave for yummy brown rice.

Some changes for next time:

  • definitely get the Archer Farms Pineapple BBQ sauce
  • add sugar snap peas to the meal
